They are totally addictive and extremely satisfying - trust me!
When you're craving carbs, this air fryer potato recipe is the answer - lately we've been making it 3 times a week! It's everything you want in a potato recipe: easy, quick, buttery, and perfectly seasoned with the most magical crispy coating.
Because the air fryer is a small convection oven, it heats up quickly and circulates hot, dry air evenly. When you're pressed for time, the air fryer is a great shortcut to fast and tasty weeknight dinners. I love my air fryer for everything from crispy air fryer tofu to vegan meatballs, and the BEST vegan grilled cheese!
Ingredients for Crispy Roasted Potatoes
Luckily there are only a few ingredients needed to make this crispy creamy potato deliciousness! Here's what you'll need to make Greek air fried potatoes (with flavor options):
- Potatoes: Starchy potatoes like yukon gold (my favorite) or russets (Idaho potatoes) cut into cubes (or any shape).
- Salt: Flavor enhancer!
- Garlic: Fresh garlic cloves for flavor.
- Melted butter and olive oil: I use a combination of melted dairy free butter and olive oil for maximum flavor, richness, and the crispiest air fried potatoes.
- Lemon juice & zest: Adds bright, citrus notes which is essential for the Greek flavor profile.
- Greek seasoning: Oregano, basil, thyme (or Greek spice blend), salt, and pepper.
- Play with seasoning: The possibilities are endless for seasoning air fried potatoes. For example: garlic and onion powder, Italian spice and parmesan cheese, sage and onion seasoning, ranch, taco seasoning, cajun or anything you like.
- Fresh herbs: I finish the potatoes with minced parsley but fresh oregano, rosemary or thyme would be enhance the Greek flavor profile as well.
What potatoes are best for roasting and air frying? Starchy varieties like yellow potatoes and russet potatoes are best. They have high starch and a low moisture content which produces a satisfying crunchy exterior with a creamy, fluffy center - an addictive texture combination!
How to Air Fry Potatoes
Here's how to cook crispy potatoes in the air fryer in 4 easy steps. I think this method produces the BEST crispy and flavorful air fried potatoes!:
- Prepare the potatoes: Peel, and cut the potatoes into ~1" cubes (bite size). Cook with garlic cloves and salt for ~8 minutes to par cook (until a fork inserted meets some resistance). Drain then add the lid to the pot and gently shake the potatoes to rough up the surface on the potatoes. The potato cubes will look like they have a layer of mashed potatoes on the surface. (This creates the perfect texture situation for extra crispy potato crusts!)
- Preheat the air fryer: Preheat the air fryer to 400º F while you drain and shake the potatoes.
- Air fry the potato cubes: I toss the potato cubes in a large bowl with half the butter, oil, and lemon juice. Then into the air fryer for 10 minutes. (Option: Add all the ingredients including the Greek spices and cook for the full 20 minutes. I've tried both methods and think the first method yields better results.) Your choice.
- Season the potato cubes & second roast: Then I transfer the potatoes back into the same bowl with the remaining butter, oil, Greek spices, and lemon juice/zest - toss to coat. Air fryer again until GBD ~8-10 more minutes. Shake as needed for even cooking.
- Garnish & dig in: Sprinkle with fresh parsley and serve immediately with your favorite dipping sauce.
TIPS & FAQ
Here's a few additional tips for air frying potatoes:
- Preparing the potatoes: Keep the potato cubes similar in size so they cook evenly. Cut medium potatoes in half lengthwise then cut each half into 6 pieces. Smaller potato chunks will cook faster and get a little crispier.
- Peel the potatoes: To create the roughed potato surface, the potatoes need to be peeled.
- The 3 secrets for ultra crispy roasted air fryer potatoes: Parboil, drain, then shake the potatoes. Use some oil/butter for extra crispy potato texture. High heat.
- Par boiling potatoes: An important step for the crispiest potatoes BUT don't overcook the potatoes in the water or they'll be too soft and fall apart!
- Air frying potatoes: This air fried Greek potato recipe is dead simple to make and totally irresistible! Adjust the cook time and/or temperature depending how hot your air fryer runs and how big your potato cubes are.
- Do I have to use oil?: One of the benefits of cooking in an air fryer is you can get away with using a lot less or no oil and still get crispy results. That's true with this potato recipe too! Experiment with less oil to no oil and see what you like best.
- Can I roast these crispy potatoes in the oven?: Yes, cook at 425º F for 25-40 minutes flipping halfway though. They are crispier in the air fryer tho . . . just saying.
- This potato recipe is naturally vegan, dairy free, gluten free, and nut free. Plus you control the additives like fat and salt - so these potatoes are as healthy as you need them to be!
Why aren't my roasted potatoes crispy?: Usually potatoes don't get crispy because of overcrowding. If you've created the slurry coating, added some oil, and the air fryer is hot, just make sure the air fryer basket isn't too full. If this happens, all is not lost: remove some potatoes and finish roasting in batches so the potato surfaces get the direct exposure to hot forced air they need to get super crispy!
How to Serve Air Fryer Fried Potatoes
This crispy potato recipe is easy and quick enough for weeknight meals yet special enough to serve on the holiday table! Here's a few of our favorite ways to serve them:
- For Breakfast: Serve as a side with tofu scrambled eggs or tuck them into a vegan breakfast burrito.
- Easy and Delicious Side Dish: Serve as a quick side dish for with any vegan protein, vegan turkey, veggie burgers, vegan grilled cheese, vegan tacos or veggie burritos.
- In a Bowl: Potatoes add heft to a big dinner salad (especially vegan Caesar salad) or a grain bowl (ie. rice, potatoes, chickpeas, leafy greens, tzatziki sauce baked tofu) or sub them into your favorite potato salad.
- As an Appetizer: Incredible starter served with dipping sauces like ketchup (or spicy ketchup), vegan tzatziki or sweet and spicy tahini to name a few.
Storing & Reheating Tips
Storing: I've never had any leftover airfryer potatoes (my husband is a human vacuum)! However, potatoes keep well in the refrigerator for 4 or 5 days. They could also be frozen in a freezer bag for several months.
To reheat: Use the air fryer at 400ºF until warmed through (only a few minutes), pop them in a toaster oven or the microwave. Thaw before reheating in air fryer for best results.

Air Fryer Roasted Potatoes with Greek Seasoning

INGREDIENTS
- 2-3 pounds Yukon gold potatoes (6-8 potatoes)
- 2 cloves garlic
- 2 tablespoons olive oil
- 2 tablespoons dairy free butter
- 2 tablespoons lemon juice
- 1 ½ - 2 teaspoons oregano, basil or thyme (or Greek spice mix)
- lemon zest (optional)
- 2 tablespoon fresh parsley, finely chopped
- salt and coarse ground black pepper, to taste
INSTRUCTIONS
- Bring a large pot of salted water to a boil over high heat.
- Peel and cut the potatoes into 1 - 1 ½" cubes. Add to boiling water with the peeled garlic cloves reduce the heat to medium and par cook for ~8 minutes until a fork inserted meets some resistance (not soft or mushy).
- Preheat the air fryer to 400º F.
- When the potatoes are par cooked; drain, let sit for a minute or two, then add back into the pot and replace the lid. Shake the pan to rough up the potatoes. The surface of the potatoes will be coated in thick layer that looks like mashed potatoes (see photo).
- Add half the oil, vegan butter*, and lemon juice to a large bowl. Add in the potatoes, season with salt and pepper then stir to coat. *You don't have to melt the butter first, the hot potatoes will do the job!
- Transfer the potatoes to the air fryer in an even layer and fry at 400º F for 10 minutes, transfer back to the bowl with the remaining oil/butter, lemon juice, and spices. Toss to coat. *Reduce the butter and oil by half if preferred.
- Finish roasting in the air fryer until GBD around 8-10 minutes. Stop to shake the air fryer basket periodically to ensure even browning.
- Garnish with minced parsley, lemon zest, and serve immediately with sour cream, tzatziki, Caesar dressing, ketchup or your favorite dipping sauce.
