    Epic Vegan Sandwich Ideas!

    These easy vegan sandwich ideas are just as filling and delicious as any made with meat or cheese. They're packed with flavor, tons of texture, and the most incredible sauces. Healthy, fresh, high protein, gluten free, and super delicious, they're perfect for lunch or a light dinner.

    My mother is the Queen of delicious and interesting sandwiches. She can transform the simplest ingredients into something extraordinary every time.

    Below you find some top tips and suggestions I've learned along the way for how to make your own epic vegan/veggie sandwich!

    Anatomy of the Perfect Vegan Sandwich

    Here's a roadmap for building a delicious, high protein vegan sandwich. Remember to include a variety of flavors and textures and always some crunch and something pickled!

    1. Bread: It should be substantial enough to stand up to the filling you choose. That could be a grainy bun, chewy ciabatta, toasted sourdough, bagel or pita bread. Also, keep the bread to filling ratio balanced.
    2. Sandwich fillings: Anything from cauliflower crumbles, chickpeas, tofu, tempeh, jackfruit, avocado, and all the fresh crunchy, juicy vegetables. No meat or cheese required - meat eaters love veggie sandwiches too!
    3. Freshness: Include leafy greens, arugula, cilantro, sprouts, and microgreens.
    4. Sandwich toppings: Add a variety of textures from creamy, crunchy, crisp, soft, tender, chewy, and chunky.
      Creamy - avocado, hummus or dairy-free vegan cheese.
      Crunchy - add lettuce (ie. romaine or iceberg), celery, carrots, cucumbers, pickled onions or chips.
      Soft and tender textures - like sweet potatoes, pitas or mashed chickpea/crab salad filling.
      Chewy textures - could come from soy curls, ciabatta or sourdough.
      Add a few nuts, seeds or try sprouted lentils or fried capers!

      Cutting the vegetables and fillings into a variety of shapes and sizes will keep the texture interesting as well. Try diced, sliced, chunks, grated, chopped, julienne, coins, ribbons, cubes or mashed for example. Consider how all the ingredients will play together and cut accordingly.
    5. Flavor: Tangy, spicy, sour, sweet, salty, and pickled. Season each ingredient and layer your flavors. Substitute hummus for butter and a drizzle of spicy mayo. Add a pinch of salt to enhance tomatoes and cucumbers. Top with sour-sweet gherkins or pickled onions.
    6. Sauce: Hummus, dijon mustard, Vegenaise, and pesto are nourishing and flavorful condiments to try instead of butter. Plus add any additional sauces or drizzles for extra flavor!

      Oh my goodness all these sandwiches look amazing. I have to say egg salad was a favourite growing up as well. Tofu scramble sounds great to me. Will try it ASAP on some African Seed Bread from a local bakery
