    Here are some of our favorite vegan brunch recipes for Easter, Mother's Day or just Spring! These plant based recipes are easy, super flavorful, loaded with texture, and best of all, everyone loves them - vegan or not!

    I love a good brunch - especially buffet style! Whether it's a family get together for Sunday Brunch, an Easter or Mother's Day Brunch or you're just stuck for an idea to take to a Brunch, I've got you covered. These plant based recipes are suitable for all eaters: vegan vegetarian, gluten free, oil free, high protein, low carb, high fiber, plant based, and sugar free. Pick and choose your favorites then get ready to feast!

    The best Brunches have a variety of sweet and savory dishes for perfect balance! Let's start with some savory recipes:

    Vegan Scrambled Eggs

    Fluffy, creamy tofu scramble served with sweet potato hash browns, flaky vegan biscuits, a drizzle of creamy chipotle sauce, and chopped tomatoes is an incredible flavor and texture combination.

    If you have any tofu scramble leftovers, do yourself a favor and make THE MOST DELICIOUS vegan egg salad sandwich ever.

    Oh So Delicious Breakfast Burritos

    Super delicious vegan breakfast burritos stuffed with tofu scramble, black beans, avocado, tomatoes, and a creamy chipotle dipping sauce. Perfection!

    For a fancy Brunch, serve curried scrambled eggs with roasted potatoes and tomato chutney on a slice of toasted sourdough.

    If you're looking for a super easy, savory, high protein and filling tofu recipe to add to your Brunch, here's a few favorites to try:

    I'm currently obsessed with these savory Vegan Sausage Crumbles! They're really easy to make and super versatile. Serve as a side dish, stuff them into breakfast burritos or veggie tacos.

    But don't stop there - there's lots of incredible tofu recipes to choose from like this super popular Italian Crusted Tofu, Oven Baked Tofu or for the crispiest tofu try Crispy Pan Fried Tofu.

    Sweet Vegan Brunch Ideas

    Okay, let's add some sweet recipes to balance out the savory dishes!

    1. Vegan Pancakes: Light and fluffy vegan pancakes are delicious slathered with butter and pools of maple syrup; but homemade jam, vegan nutella, peanut butter and fresh fruit are delicious toppers for your pancakes too!
    1. Vegan Banana Bread: Easy to make, super moist, and extra flavorful from peanut butter, bananas, walnuts, and chocolate chips. The perfect addition to any Brunch.
    2. Vegan Cinnamon Buns: These cinnamon rolls are made with my Bucket of All Purpose Dough - no knead, only 5 minutes to mix together, and super versatile. Another gooey cinnamon dessert is Monkey Bread (just like pull apart donut holes!)
    3. Homemade Granola: Granola is the perfect topper for smoothies, yogurt bowls, pancakes, and more! Make it a couple weeks in advance to save time the day of your Brunch.
    4. Apple Crisp: A quick and easy family favorite dessert! Pray for leftovers, it's just as delicious the next day!

    Vegan Salad Ideas for Brunch

    Brunch is that wonderful in between breakfast and lunch meal situation. So, salads are a must IMO. Here's a few easy, make-ahead salads that are total crowd pleasers:

    • Vegan Caesar Salad: The best tasting vegan Caesar salad with crispy fried capers and homemade croutons.
    • Epic Crunch Salads: This Thai Crunch Salad with spicy peanut dressing is the most popular salad on the blog. But this Asian Cabbage Salad with crunchy ramen noodles and totally addictive dressing is my favorite.
    • Vegan Greek Salad: What sets this Greek salad apart is the crispy crunchy salty fried capers and creamy homemade vegan feta.
    • Fresh Summer Rolls: These salad rolls are unbelievable, super healthy, light and fresh - perfect for Spring. And the peanut hoisin dipping sauce is epic! Make ahead to serve plated or buffet style at an Easter brunch.

    Vegan Sauces

    Here at Simply we are sauce-a-holics. So no meal is complete without some kind of drizzle, dipping sauce or dressing. Check out the whole collection of sauces and choose your favorites (all make ahead friendly!). Here's a few of the top sauces on the blog (they're incredible on everything!):

    Planning Tips for Hosting a Brunch

    Whether you’re planning a brunch for Easter, Mother’s Day or any other family get together, here’s some tips to make the day more enjoyable for you (the host):

    1. Plan your menu: Choose a mixture of make ahead and day of recipes so you're not stuck in the kitchen all day. Simple platters like fruit and veggies with dip or avocado toast are quick, easy, and keep everyone happily snacking. Also, let people bring a favorite dish to share (many hands make light work).
    2. Groceries: Go through each recipe and write down the groceries you'll need (don't forget the groceries for any drinks you'll be serving). And buy or make ice.
    3. Make a cooking timeline: Just like a professional chef, your event will run smoother if you know what has to be cooked where ie. oven, stove, air fryer, BBQ, toaster oven, etc. Make a schedule and cross things off when complete.
    4. Make ahead / prep: Make and prep ahead of time anything that is humanly possible ie. sauces, dressings, dips, chopping fruit and veggies, make any grains or salads that store well, etc. If you're planning a welcome drink, make the components ahead and get your 'bar' area set up.
    5. Decorate: Decorate the house, arrange your flowers, set the table, etc. in the days before the Brunch.
    6. Have FUN!: Let go of perfection! Go with how the day unfolds. Whimsical has a way better vibe than perfection anyway. Enjoy time with your guests and the delicious food.
