Healthy Vegan Granola Bowl Recipe

Ingredients

  • ½ cup plant-based yogurt* (per person)
  • ½ cup berries, assorted
  • ¼ cup granola recipe (below)

Peanut Butter Granola

  • ½ cup maple syrup
  • ½ cup natural peanut butter (runny) or ⅓ + 2 tbsp coconut oil
  • 1 ½ teaspoons vanilla
  • 2 ½ cups rolled oats
  • cup peanuts
  • 1 teaspoon cinnamon
  • pinch salt (if needed)
  • cup shredded coconut, unsweetened
  • 2 tablespoons hemp hearts

Cherry-Berry Fruit Compote (optional)

    Peanut Butter Drizzle

    • 2 tablespoons peanut butter (runny)
    • 1 tablespoon maple syrup (for thinning)
    • pinch cayenne

    Instructions

    How to Make Healthy Granola

    • Preheat oven to 325 F.
      Cover baking sheet with parchment paper.
    • stir peanut butter, maple syrup and vanilla together.
    • In a large mixing bowl add the dry ingredients. Pour the peanut butter mixture over the dry ingredients and toss to combine.
    • Spread granola evenly on the baking paper and press to flatten.
    • Bake for 25-30 minutes until golden.
      Check periodically to ensure the edges are not getting too dark. Rotate the pan after 15 minutes.
    • Remove from oven and let cool completely before removing from pan.

    • Store in an airtight container in the fridge for up to 3 weeks.

    Preparing the Breakfast Bowl

    • Place your favorite plant-based yogurt* in a bowl or jar.
      * My favorite plant-based yogurt is the vegan series from Maison Rivera (best ever)!
    • Add a sprinkle of the crunchy granola, and an assortment of berries or fruit (fresh or frozen).
    • Optional - add a spoonful of fresh fruit compote.

    • Add a drizzle of peanut butter drizzle. Mix together the runny peanut butter, maple syrup, and a pinch of cayenne (to taste). Drizzle over breakfast bowl.

    Notes

    • Natural peanut butter is runnier and is easier to combine with dry ingredients.
    • If your peanut butter is unsalted, add a pinch of salt, taste and adjust to taste.
