Vegan Parmesan Cheese (quick + easy)
Servings: 1 cup
- 1 cup raw cashews
- 3-4 tablespoons nutritional yeast
- ½ - 1 teaspoon garlic powder (to taste)
- ½ - ¾ teaspoon sea salt (to taste)
For the best texture, pulse the mixture in the food processor stopping to check texture periodically. It's pretty fast!
Store in a glass jar in the fridge for several months.
Try with walnuts, pistachios or almonds for a different flavor/texture. For a slightly oilier mouthfeel, use ¾ cup cashews and then stir in ¼ cup hemp hearts after blending.
Nut-free Alternatives: use sunflower seeds or hemp hearts (no need to use food processor for hemp hearts - just stir together with other ingredients).
